21 Day Sugar Detox Learning Curve – Day 2

Day 2 of the 21 Day Sugar Detox was yet another learning curve.

Breakfast was a bowl of oats to which I added a diced apple and unsalted nuts. It felt healthy (what could be healthier than oatmeal and fruit for breakfast?) and I didn’t add sugar to the mix, I just blended a few spoonfuls of unsweetened Almond Breeze almond milk to mix. But alas, neither oats nor gala apples were on the approved list so I had to make sure everything else I ate for the day was Detox- compliant.

Lunch was a tuna salad with vegetables. Not very exciting but pretty tasty.

So I wanted to splurge and make a nice dinner. I still have leftover lamb but I want to save it.

I decided to make roast chicken with vegetables and one serving of rice. I’m limited to a half-cup serving of grains or legumes per day and I haven’t had rice in a few days so I was missing it.

I seasoned chicken breasts with the same spice blend I made for yesterday’s lamb – chopped fresh mint, rosemary and thyme leaves, mixed with a bit of olive oil and black pepper and rub it into the chicken breast. I wanted to roast the breast with the skin on so it would get a little crispy and retain the juiciness, so I stuffed the seasoning under the skin, along with a crushed garlic clove. I let it sit for about half an hour for the marinade to soak in then I put it in the oven at 350 degrees for about 40 minutes. I cut half a potato and one large onion into chunks and placed them in the bottom of the pan so they will absorb the juice of the chicken as it roasts.

On to the vegetables. I haven’t had kale in a while. I sauteed an onion, three medium sized baby Bella mushrooms, three small radishes and then I added a few leaves of kale that I had washed, broken apart and soaked in salt water for about ten minutes.

I sliced up half an avocado. And voila, dinner was served. Delicious, Easy and 100 percent Sugar-Detox-compliant. Yeah!

Before bed,  I had Celestial Sleepytime caffeine-free tea with lemon juice and grated ginger root. I love the way this tea smells like peppermint and it did NOT need sugar, even when I added the lemon juice and ginger. (Thanks, Paul, for introducing me to this tea)

This sounds crazy but I am looking forward to the rest of the 21 Day Sugar Detox. I am not fully compliant yet but I think as I move forward, it will get easier to make the right choices and I am looking forward to trying new foods that I might not otherwise have eaten.
