I went camping last Thursday so my weekend eats were very simplified.
I brainstormed a savory muffin and ended up with this spinach, potato and cheese pie for Thursday breakfast

Thursday dinner at camp was bread, cheese and olives.
Other things I ate at camp were more for survival than sophistication.

When I got home, I was longing for a solid meal. So I cooked up a storm.
Mushrooms and broccoli with garlic sauce

I made beet chips for a nighttime snack

And ate lots of fruit.

I ate some good food this week. That’s what being a vegetarian is all about for me. I hope to have some even better eats to share with you for next week’s WIAW.
