My challenge was to eat foods that had every color of the rainbow in a day – red, orange, yellow, green, blue, indigo, violet. 1.These blueberries actually have an indigo color so I am checking off blue and indigo with my breakfast of an oatmeal/granola mix, with chia seeds, fresh blueberries and almond milk. 2. This vegetarian medley had Orange – carrots, green -pepper and violet – cabbage (along with brown – mushrooms and white – angel hair pasta 3. Red from tomato sauce and the yellow-ish garbanzo beans in these potato nuggets 4. Do yellow M&Ms count? (Just kidding – maybe if the candies themselves were yellow. But they weren’t.)
