Instead of sharing my day’s meals, I’ve put together some of the food I prepared for the week ahead. Last week, I decided that I’d try to plan my meals in advance to make sure I’m eating properly and not just randomly eating what’s available.
I made a meal plan for the week (click here to read that post) and wrote a shopping list for what I’d need to make those meals.
I didn’t get everything I wanted in my local grocery store. The mushrooms were un-appealing and the salmon was farm raised so I have to make a Trader Joes run another day and substitute something else until then. But I’d say it was a successful shopping trip nonetheless.
The makings of a soup for those cool, fall nights.
Wild rice medley with lentils.
Vegetable Stir-Fry
And this is what an easy dinner looks like when all the pieces are assembled and just need to be reheated.
In other news, here are some funny exercise pics that I had to share.
