Vegetarian chili, homemade kale chips and grilled salmon were high on my list of things to make in my meal plan for this week.
I’m off plan a bit because the vegetarian chili was so delicious, it’ all I’ve wanted to eat. I actually made a 5 bean/peas chili – black beans, kidney beans, yellow split peas, green peas and lentils. Whoa! Talk about fiber! I also added some corn to improve the texture.
This chili is awesome, served with a tablespoon of shredded cheese – I used a Mexican blend – and a few tortilla chips. I’m not really into recipe writing but I can post my recipe if anyone is interested.
I stood by the window and looked out in the backyard while eating my first bowl of chili and it was like an installment from the happiness project.
I jazzed up my apple with seeds – half an apple, cut in small chunks, mixed with hemp hearts, sunflower kernels and some chunky peanut butter.
It’s hard not to smile when you’re eating this. Unless you have a nut allergy. In which case, you probably shouldn’t even talk to me because there’s so much peanut on my breath now.
Sunday dinner, too was awesome.
